Apple-Cinnamon Almond Cookies

These soft, chewy and only slightly sweet cookies make a great after school snack in addition to being a healthy dessert.

4 tablespoons butter, melted
1/2 teaspoon pure vanilla extract
1/2 cup crystalline fructose
1 teaspoon cinnamon
1/8 teaspoon sea salt
1/2 teaspoon Ener-G baking powder
1/2 cup raisine (optional-Group C only)
1/2 apple, peeled and grated (Sucraid required)
2 cups blanched almond flour

1. Preheat oven to 300◦F. Mix butter, vanilla, fructose, cinnamon, salt, and baking powder with a wire whisk in a medium-sized bowl.
2. Add currants and apple and mix together well. Mix in almond flour with a wooden spoon until flour has absorbed all the liquid and can be formed into ball.
3. Using a small scoop or tablespoon, place balls of mix onto an ungreased cookie sheet. Flatten cookies with the back of a spoon or fork.
4. Bake for 25 minutes or until cookies are a dark golden brown. Cool completely on a cooling rack before serving.
