Raspberry Lemonade Slushy
All of my kids love this! It’s yummy, cool and easy on the tummy too!
Yield: 6 servings of about 4 ounces each
2 cups ice
1 cup frozen raspberries
16 ounces sodium free sparkling mineral water (we use S. Pellegrino)
Juice of 1 large lemon
1/4 cup crystalline fructose (if using a different sugar-free sweetener, adjust amount according to taste)
1. Combine all ingredients in the order listed above in a large blender or Vitamix.
2. Blend thoroughly on high speed until slushy, adding more mineral water if needed.
3. Garnish with fresh raspberries or lemon slices or both. Serve immediately with a straw and a spoon.
Variations: Use strawberries or blueberries in place of raspberries. Add or replace lemon with the juice of 2 limes.
